What's in Garlic (Powder)
Garlic powder is dehydrated garlic, milled — convenient, and milder than fresh.
- Contains sulphur compounds, of which allicin is the best known.
- Allicin forms when fresh garlic is cut; drying changes the balance of compounds.
- Powder disperses evenly, which fresh cannot do in a rub or a dry mix.
In the kitchen: Use in rubs, marinades and dry blends. Half a teaspoon roughly replaces a clove.
